Selenium is a powerful antioxidant, a trace element that is essential for the body. Selenium slows down the oxidation process. It stimulates energy and the immune system by producing antibodies; it also plays a role in regulating thyroid functions.
Plant foods are the main source of selenium food in most countries around the world. The level of selenium in food depends on the amount of selenium in the soil where the plants are grown and the animals are raised. It is known that soils in the northern Nebraska and Dakota highlands have very high levels of selenium.
People living in these areas generally have the highest rate in the United States. The soils in parts of China and Russia have very small amounts of selenium; this deficit is noted by the fact that most food is grown and consumed locally.
The selenium content in food is variable, for example, Brazil nuts can contain up to 544 micrograms of selenium. Too much selenium can be harmful. The upper safety limit acceptable to adults is 400 micrograms per day.
