Xylitol is a polyol extracted from birch bark considered for about twenty years as a remarkable substitute for conventional sugar (sucrose) in the Nordic countries. It is a most interesting sweeteners of natural origin because it is perfectly suited to people with diabetes and to all those who wish to reduce or stop their consumption of sugar.
Xylitol is produced from one of the constituents of birch wood, hemicellulose. Its manufacture does not require the use of chemical solvents, and it can be considered as a product of natural origin opposite synthetic chemical sweeteners such as aspartame or acesulfame K. Its greatest, it has no aftertaste as some natural sweeteners may have.
Xylitol has the same sweetening power and flavor as sucrose (almost similar sweetening power). On the other hand, xylitol has a refreshing effect and its calorie intake is lower than that of sucrose with 2.4 kcal/g against 4.0 kcal/g.

In addition, xylitol has a very low glycaemic index (7-8) compared to that of sugar (70), which makes it an asset in the fight against hyperglycaemia attacks. Xylitol is non-acidifying for the body, unlike other sugars.
Caution: Xylitol has a sweetening power equal to raw sugar but 30% higher than cooking, in preparing your pastries you will only have to use 70 g of xylitol per 100 g of sugar.
In Finland, this product has been democratized through campaigns by oral health associations in the prevention of carry.
