Acids and bases

Salts such as common cooking salts can be dissolved in water. This means that the chemically bonded ions (electrically charged particles) are dissolved between them and are now in a free state.

Acids are chemical compounds that emit hydrogen ions, and the bases absorb H-ions. Example: In the case of hydrogen chloride (HCI), the H-ions are released, the water becomes acidic, hydrochloric acid is produced. With sodium hydroxide (NaOH), on the other hand, hydroxyl ions are formed (OH), the water becomes basic again. Caustic soda is produced. The more the H1-ions are present in a solution, the more acid it is. The less they are in a solution, the more alkaline it is.

The balance for the concentration of hydrogen ions is called the pH value. This represents the hydrogen potential ('hydrogen force'). The pH value indicates whether an alkaline, neutral or acid solution reacts. In a neutral solution such as pure water, the pH is exactly 7. The pH of an acid solution is less than 7, the pH of an alkaline solution is greater than 7.

The importance of blood pH

Since all metabolism reactions depend on pH, it is deduced that only in an ideal manner within a certain pH margin, the body must stabilize the pH of the blood within a margin between 7.36 and 7.44. It is only in this margin that the blood is ideally supplied with oxygen. If the pH of the blood is above 7.44, a degenerative pathology.

Acidosis (excessive acidity)

All metabolic reactions produce H-ions, which are excreted by the kidneys or are to be absorbed by buffers (such as alkali minerals). The amount of free bases in the body is 20 times higher than the amount of free acids. This is an indication that life began mainly in an alkaline area. For each acidic molecule, there are 20 alkaline molecules in our body. This huge buffer effect protects us from acute acidosis, acute overacidity. This happens very rarely, and fortunately, because it is a medical emergency. The best known acidosis is hidden and latent.

Latent metabolic acidosis is a widespread phenomenon nowadays. The causes are diverse:

  • Environmental: It is estimated that the human escape of carbon dioxide is 32 billion metric tonnes per year. Climate experts calculated that this has led to the highest CO2 concentration in the last 650,000 years of Earth's history. Carbon dioxide is produced in the course of burning fossil fuels such as oil, coal and natural gas. CO2 dissolves in water and then falls as "acid rain" on our soils. This leads alternately to the finished acidity of the soil and the lack of alkaline minerals for our foods.
  • Diet: foods containing acid are not known to be acid-generating to the human body. Acids are produced by processing food by metabolism with sulfur containing amino acids (sulfuric acid), phosphates (phosphoric acid), carbohydrates and fats (Ketoic acid, lactic acid). acid and base tables that can often be found in literature are based on the research of Ragnar Berg in 1912. But Berg didn't look for acids and bases, but cations and anions, which is quite a different thing.

We now know that what matters is the presence of hydrogen ions. But the truth is that a vegetarian diet will produce more alkaline metabolites. Lack of exercise, exercise and dehydration due to low water consumption can also lead to slow systemic acidosis.
